Movie night included a little crab, some shrimp, these:
Asparagus and beef rolls. The paper-thin beef has been thinly covered with a horseradish sauce.
And these:
Cauliflower Poppers and Easy Zucchini Parmesan. The remaining asparagus was left-over from the rolls.
We have lots left over. I think the zucchini and cauliflower may become a side for something this week or next!

How did you do the zucchini and cauliflower?
The cauliflower was amazingly simple:
Cut a head into florets, toss with 1/2 tsp each salt, pepper, cumin and chili powder. Bake for 10 - 12 minutes at 375. Stir about halfway through to make sure it cooks evenly.
The zucchini was simple, too. Slice 3 medium zucchini into rounds. Spray a cookie sheet with cooking spray. Lay the zucchini on the sheet, then spray with 20 - 35 pumps of "I Can't Believe It's Not Butter" spray. Sprinkle 2 1/2 Tbl. Parmesan cheese over the rounds. Broil for a couple minutes, until the cheese looks done.
I think I'm going to do the zucchini for dinner side this week. I bet left overs of that cauliflower might make a tasty soup.
They might, if they last long enough to become soup!
